Like yogurt, I always have cottage cheese in my fridge since it’s such an easy source of protein. Sometimes I add it to my frittatas or waffles or make it the base of a breakfast bowl . Whisking cottage cheese into my scrambled eggs is almost too simple but definitely worth sharing. This is a great recipe for people who don’t like the taste of cottage cheese, but want to incorporate it into your meals because you can’t taste it.

Tips for perfect scrambled eggs

  • Pan: Use a nonstick pan sprayed with oil to ensure that the eggs don’t stick.
  • Cottage Cheese: Any brand of cottage cheese will work, but my favorite is Good Culture’s low-fat cottage cheese.
  • Cooking: Use a rubber spatula to gently fold the eggs over for about one and a half to two minutes until they are just set.

How to serve

  • Serve the eggs with whole grain toast and fresh berries.
  • Wrap them in a tortilla to make breakfast tacos or burritos.
  • Make breakfast sliders by putting the eggs in small potato buns. Add breakfast sausage or bacon for extra protein.
  • Finish off your eggs with your favorite toppings for a breakfast bowl.

SCRAMBLED EGG WITH COTTAGE CHEESE VARIATIONS:

  • Seasoning: Use different spices to change the flavors. For example, season with garlic and onion powders and dried basil and oregano for Italian or chili powder and cumin for Mexican.
  • Veggies: Add spinach, mushrooms, or bell peppers to the eggs.

  • In a medium bowl, whisk the eggs, cottage cheese, kosher salt and black pepper, to taste with a fork.
  • Heat a medium nonstick skillet over medium-low heat and spray with oil. When warm, pour the eggs in.
  • Using a rubber spatula, slowly scrape sections of eggs to the center of the pan as the bottom starts to set, creating soft folds for about 1 1/2 to 2 minutes total until just set.

  1. I’ve made scrambled eggs with cottage cheese for years this way! They are awesome and very tasty! Thanks for sharing the recipe!

    I sometimes add cooked ground sausage, and a few diced tomatoes. I cook it in butter or bacon grease for a great high protein, high fat, low carb recipe!

  2. I am not a huge fan of eggs. They exist in my house because you need them to make cookies and cakes. I tried this as a way to eat healthier and add more protein. This is my third morning in a row to make these.

  3. This is so delicious. I sautéed onion, yellow pepper, zucchini and garlic in some bacon fat before adding the eggs and it’s perfect. I think it would also be really good with wilted greens.

  7. I would never have considered this recipe because of the cottage cheese. I do not like the texture of it, and would never consider eating it because of this. But, I also hated missing out on something so full of protein. After reading others reviews who mentioned that you don’t even taste the cottage cheese, I decided to give it a try. I went in with very low expectations. Well, I was very pleasantly surprised! The chunky cottage cheese melts down perfectly. You can’t even tell its in there.   15. Hello! A bit confused on the calories. I used 80g 2% cottage cheese and 2 extra large eggs and my calories were in the 400 range. I’m relatively new to calorie counting, but this seems off to me. What did I do wrong?

    1. You used Xtra large eggs plus 2% cottage cheese. Next time try large eggs (72cal ea & 6.3g protein) & low fat cottage cheese (90cal 1/2 cup 13g protein). That could be a 234 cal/25.6g protein breakfast! Not bad!

    I love these eggs! The texture and taste is so much better than regular scrambled eggs. I served them on a crispy tostada shell with some cheese and a sprinkling of hot sauce. Yum!!

  22. My first time trying this today. They even smell great. I always add about a tablespoon of water to the pan when I make scrambled eggs. Gives the eggs a tender texture. Loved the taste of these. Will make again. I reduced the recipe to 2 eggs and 1/4 c low fat cottage cheese. Quick, easy, yummy

  23. Had a watery residue in the frying pan. Eggs tasted ok after I blotted them with a paper towel. What did so do wrong?

    1. Probably due to the fact the recipe has salt added prematurely which is drawing out moisture from your eggs creating water in the pan and leaving you with dry scrambled eggs. Try adding the salt when the eggs are halfway done.

    1. The first time I tried these, I made the entire 2 serving recipe and had one serving the first day, and the second serving the next day. They were still great the second day, so I’d think they would work fine for meal prep!

    1. Yes! That’s what I did. I used one whole egg and 2 egg whites for myself (still used 1/2 cup cottage cheese) and it was delicious.

    1. I cooked mine a little longer so they wouldn’t be runny. You could also strain the cottage cheese; sometimes it’s watery.

    Love this combo. I was like you not getting enough protein for breakfast. It’s easy to do too. Have not tried it in a tortilla, just read that idea. I even sometimes add bell peppers to it. Pair it with fruit and toast.

  47. These are a big surprise and have quickly become my favorite way to prep scrambled eggs. The cottage cheese actually develops a nice chewiness similar to when I add cheddar to a scramble. I like to add chives when beating the eggs.

  49. This was delicious but the cottage cheese made it very wet. I should have drained off the extra liquid because when I put the eggs in a tortilla, it was quite soggy. Going to try it again and drain the cottage cheese first and see how that works.

    I hate cottage cheese. And I’m not fond of scrambled eggs. But I’m currently pregnant with a lot of food intolerances and my proteins in my blood are dropping. I tried this on a whim, and the combination turns into something magical on the stove. The eggs are light, fluffy, and less eggy tasting, and the cottage cheese adds richness. It remains visible in the eggs but I can’t taste it. I do use full fat cottage cheese as weight loss was a struggle for my first two trimesters. Thanks for the recipe!

  52. These eggs turned out light and fluffy, just the way I like them. To the reviewers that said they didn’t like cottage cheese, try crème fraîche or cream cheese. Mix any of these cheese into the eggs very well. Cook the eggs low and slow to make them soft and fluffy. Makes great breakfast tacos.

  54. I was really hoping I would like this since I like cottage cheese and eggs. Sadly, it came out a big wet sloppy mess. Not sure what I did wrong. Should I have drained the cheese first? Cooked it a little longer to dry it out? Will try again.

  55. I like to make my meals for the week on Sunday when I am training classes during the week, this keeps me from not eating until late and then eating everything in site. I used 4 x-large eggs and only 1/4 cup of cottage cheese because I wasnt paying attention to what the recipe said and a little bit of everything but the bagel seasoning and pepper and these turned out great and made enough for 3 breakfasts and because they are so creamy they should heat up beautifully.   58. I tried so hard to like this.  I’m not a cottage cheese fan but I love the Savory Bowls.  I think I will try again with small curds.  It tastes good, but the texture was hard to get by.  Maybe I’ll throw in some mushrooms next time, too.

    So deliciously easy! I used Hood cottage cheese with chives and they came out great! Served it with a slice of toasted sourdough. My boyfriend was a little skeptical at first as he watched me make it but he’s now a believer…ate every last bite 😁

  69. My favorite scrambled eggs! I think they cook perfectly but just take longer than regular scrambled eggs. I make ahead of time and then just microwave them. Sometimes top with some avocado, franks red hot and everything but the bagel seasoning. Soooo good!! 

  70. Sounds delicious. The protein count seems high for 1/2 serving. Does Good Culture contain 30 grams of protein/half cup? That would be about twive what other cottage cheeses contain.

    1. 1/2 c. of good culture cottage cheese has 14 g protein (so 1/4 c. has 7 g. protein). 2 eggs have 12 g. protein. There’s your math.

  73. Do you think this would work with greek yogurt or quark? The only cottage cheese at my store seems to be filled with a lot of ingredients like GUAR GUM, MONO AND DIGLYCERIDES, XANTHAN GUM, LOCUST BEAN GUM. I will check if they carry better brands but thought maybe could up the protein with quark or yogurt instead?

      1. Seriously-you have to try this recipe but use Good Culture cottage cheese. That’s what the author of this recipe preferred & it does matter. Ingredients are a very short list & are all simple clean ingredients that you can pronounce. Very creamy small curd style & not watery.

  81. I made the cottage cheese scrambled eggs and it was just too runny. It look a pretty long time dry out enough to not look and feel raw. I love the idea, but not the way it came out.

    1. Do you have an immersion blender? I mixed it with my immersion blender on the lowest setting, as I figured mixing with a fork would be insufficient. The result was very nice, though a bit fiddly to cook.

I have wanted to try recipes that include cottage cheese, but I’m not creative enough to to just make my own. I struggle when people say “just mix a little of this and little of that,” so this was perfect for me and I look forward to trying it!
